Summer Food: Quinoa Bean Salad

This is one of our family favourites any time, but especially during the summer. It is easy to make and very tasty healthful bite. You can pretty much use any vegetables, fresh and steamed that you have in the fridge at the moment with any type of beans.

In this salad, I used chickpeas, cooked and cooled quinoa, red pepper, green onions, fresh tomatoes, corn,cucumber, steamed green beans and carrots. You could also add feta cheese and/or olives. Top this with home made dressing of olive oil, salt, pepper, lemon or lime juice and dried oregano and voila!

It's great on its own or with ready chicken, or meat patties. Quick and simple recipe that will be asked for again and again. Wonderful choice also for entertaining vegetarians as quinoa has the most complete protein among all vegetable food sources.
